There's nothing that says the motto *has* to be in Latin either. Look at, say. the SAS, their motto is 'Who Dares, Wins' or the SBS; 'Not by Strength, by Guile'.
The motto has to reflect the idea or general mentality of Starfleet, and it has to be snazzy enough too.
From 'Pillgrims':
"We are the Pilgrims, master; we shall go Always a little further"
So you could shorten that to "Always a little Further". Starfleet always striving to go that step furhter, to give %110, to explore the boundries, to push their limits.

I think it's great actually. It just became canon. However, I also agree with Tup that it should be in Latin.

Curious, is there money in STR? If so, then you guys may want to consider the following:
Starfleet's mission is to venture out into space and expand its sphere of influence. To search for other alien civilizations and develop relations with them, while providing assistance to those who are in need, which in turn will establish respect, understanding, peace, as well as allies, trade and commerce.
Just a thought.
